Yields: 10-12 Servings
12 ounces Mueller’s Tri-Color Rotini
1 cup chunky salsa
1/2 cup red wine vinaigrette
2 medium tomatoes, chopped
1 large cucumber, not peeled, halved lengthwise, seeded and thinly sliced
2 stalks celery, sliced
1Cook pasta according to package directions; rinse with cold water, drain well and set aside to cool.
2In a small bowl, stir together salsa and red wine vinaigrette.
3In a large bowl, combine pasta, tomatoes, cucumber, and celery. Pour dressing over pasta and vegetables and toss together.
4Serve immediately, or cover and refrigerate until chilled.
Cook's Tip: To easily seed cucumbers, slice them in half lengthwise and use a teaspoon to gently scrape out and discard the seeds. Add two sliced green onions, or sprinkle with 2 tablespoons minced fresh cilantro, if desired. Choose mild, medium, or hot salsa, as desired, or season to taste with a few drops of hot pepper sauce.
