This Asian-style linguine dish is unbelievably simple to make. An Asian vinaigrette coats the linguine and pork, giving this dish a zesty flavor.
Cook pasta according to package directions; reserve 1/2 cup pasta cooking water then drain well and set aside.
Meanwhile, heat oil in a large skillet over medium-high heat. Add pork strips and season with salt and pepper. Cook, stirring frequently, until pork is lightly browned, approximately 3 minutes.
Add frozen vegetables and cook, stirring frequently until vegetables are crisp-tender and meat is fully cooked, about 10 to 12 minutes.
Stir vinaigrette into skillet and add cooked pasta, tossing to combine. Stir in 1/2 cup reserved pasta liquid if a thinner sauce is desired.
